The sardine is a fish native to the Atlantic and Mediterranean. It has a silvery body and aromatic dark flesh. It takes its name from the island of Sardinia, near which it was discovered.

This fish is very rich in healthy fat. It can be eaten fresh or canned. Canned fish, of course, isn't as tasty as fresh, but it's no less healthy and can be served as an appetizer.

How to choose the best one?

Sardines don't travel well over long distances, so it's best to buy them locally. Choose fish with clear, clean eyes and fresh, shiny scales.

Preparation

Before using, the fish must be gutted. Sardines are best cooked in the simplest ways: grilling, barbecue, or pan-frying in oil with Mediterranean herbs.

In cooking, you can use anchovies or mackerel instead.

Storage

Sardines do not keep well, so they should be eaten as quickly as possible.
