Goat's-beard is a root vegetable belonging to the dandelion family. It is sometimes called a vegetable oyster because it develops an oyster-like flavor when cooked. Its roots resemble long, thin parsnips, with creamy white flesh and a thick skin. Like many other root vegetables, goat's-beard can be eaten boiled, pureed, in soups, and in vegetable dishes.

When can I buy it?

From October to January.

How to choose the best one?

When choosing, look for a firm, smooth root vegetable. If it's sold with greens, the greens should be fresh and green.

Preparation

Before use, the roots should be washed under cold running water, peeled with a sharp knife and placed in water to which a small amount of lemon juice should be added.

After this, remove the roots from the lemon water, cut them into pieces, and simmer for half an hour, or until soft. Now drain the water and lightly fry the roots in butter.

Storage

Store salsify in an airtight container in the refrigerator and use within a week of purchase.
