Calasparra (rice)

Spanish round grain rice, white, slightly translucent in color, the grain is wide, with a white stripe in the center. Calasparra rice increases in width by 3 times when cooked, while a higher quality variety, called Calasparra Bomba, increases in size by 4.5 – 5 times.

Rice contains enough starch to absorb moisture, allowing it to infuse the flavors of spices and absorb more liquid. Calasparra rice is used to prepare milk porridges and rice dishes such as pilaf and paella.
