Dorblu (cheese)

Dorblu, a German blue cheese, is made from cow's milk with the addition of the fungus Penicillium roqueforti, which imparts a greenish-blue color to the cheese. The cheese has a moderately spicy, slightly tangy flavor. It is served as an appetizer with grapes and nuts, complementing German white wines, Riesling, and port. It is also used in fondues, salads, soups, sauces, and savory baked goods.
