How to Make Belekoy – Malaysian Pastila

Belekoy is a traditional Filipino confection, vaguely reminiscent of marshmallows. It's incredibly easy to make and tastes wonderful. Brown sugar is simmered in apple juice and thickened with glutinous rice flour. Vanilla can be added for flavor. Once set, the belekoy is cut into slices and rolled in sesame seeds. You can wrap them beautifully in clear plastic bags like candy and share these homemade treats with friends.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 3 cups glutinous rice flour
  • 4 tablespoons toasted sesame seeds
  • 2.5 cups of water
  • 1.5 cups brown sugar
  • 1 packet of instant apple juice powder (per 1 liter)
  • 1 teaspoon vanilla syrup

Cooking the dish according to the recipe:


  1. Heat a frying pan over low heat. Add the sesame seeds and toast, stirring, until light brown.

    Fry the rice flour in the same way.
  2. Pour water into a saucepan and bring to a boil. Add brown sugar and apple powder and stir until the sugar is completely dissolved.

    Add vanilla and toasted rice flour and cook at a low simmer until the mixture is thick and simmers well when stirred.

    Remove from heat and let cool.

  3. Cut the prepared mixture into pieces of any shape you like. Sprinkle the sesame seeds on a clean board and roll the beleka in them until the pieces are completely coated.

    Serve immediately or wrap the beleka in portions in plastic wrap.
