This is an Italian hard cheese of pale yellow color, made from sheep's milk. Pecorino Romano has a firm texture and is crumbly when broken. The cheese is cylindrical, covered in a protective casing, and matures for 5 to 12 months.

Young cheese has a sweet, creamy flavor. Depending on its maturity, the cheese develops a strong, salty, and slightly tangy taste.

Pecorino Romano cheese can be served as an appetizer with Chianti wines and Italian carasau bread, grated as a topping, and used to prepare Italian pasta and risotto.
