Fontina (cheese)

A semi-hard Italian cheese made from full-fat cow's milk. It is aged for 3-4 months. Fontina cheese has an elastic consistency, a light yellow color, and a sweet, rich flavor. Matured, it melts easily and is used in main dishes. Young Fontina can be served as an appetizer, pairing beautifully with red wine.
