A juicy turkey cutlet with melting fontina cheese is served on a slice of focaccia with a slice of sweet tomato, crispy pancetta, and zesty arugula. The cutlets are made with a mixture of ground turkey and raw Italian turkey sausage, pre-seasoned—all you need to do is remove the casing and toss.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 3 tablespoons mayonnaise
  • 1 clove garlic, finely chopped
  • 220 g of ground turkey
  • 350 g raw Italian turkey sausage, casings removed
  • 2 tsp extra-virgin olive oil
  • 8 thin slices pancetta
  • 110 g thin slices of fontina cheese
  • 4 pieces of focaccia measuring 7x7x1 cm, cut in half horizontally and lightly toasted
  • 1 plum tomato, thinly sliced
  • 1 cup fine arugula

Cooking the dish according to the recipe:


  1. Mix the mayonnaise and garlic in a small bowl and set aside. Using your hands, mix the ground meat and turkey sausage together in a large bowl, distributing them evenly. Form the mixture into four patties, 2.5 cm thick.
  2. Heat a large skillet over medium heat. Add olive oil and pancetta slices and cook on both sides until crisp, about 3 minutes. Transfer to paper towels to drain excess oil and set aside.

  3. Place the same pan over medium-high heat and add the patties. Cook, turning once, until cooked through, about 5 minutes per side. Place the fontina on top and cook until just melted.
  4. To serve, place the burgers on the bottom halves of the focaccia. Top with tomato slices, pancetta, and arugula. Spread the tops of the focaccia with garlic mayonnaise, top the burgers, and serve.
