Almond cookies are a traditional Turkish dessert, available in most bakeries across Turkey. They're chewy, slightly sweet, and go perfectly with coffee. There are a few nuances to the recipe, so if you want to treat your loved ones to a delicious pastry, try to follow it exactly. And remember, remove the cookies from the oven as soon as they reach a golden yellow color; a darker hue will guarantee hardness.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • Almond flour – 250 grams
  • Granulated sugar - 375 grams
  • Egg white - 200 grams
  • Lemon juice - 2 tablespoons
  • Almond flavoring - 1 drop (optional)

Cooking the dish according to the recipe:


  1. In a medium saucepan, combine almond flour, powdered sugar, and egg whites. Whisk thoroughly.
  2. Place the pan over low heat and simmer for 10-12 minutes, stirring occasionally. Pour in the lemon juice, remove from heat, and stir with a soft spatula until the dough cools.

  3. Set aside and let cool to room temperature.
  4. Take a baking tray and line it with baking paper.
  5. Using a paper envelope, form the dough into round cookies with a diameter of 5-6 cm, leaving a gap of 3-4 cm. You can place a whole almond kernel on top.
  6. Preheat the oven to 130°C (250°F) and bake the almond cookies on a baking sheet for 30 minutes. Monitor them closely during the last 10 minutes to ensure they're done. As noted above, the cookies shouldn't be too dark.
  7. Remove the finished product directly on the baking paper and place it on a damp, cool towel, which will allow it to be easily separated from the paper.

    Serve the cookies on a serving platter.
