Trout

Trout is a farmed fish with shiny, iridescent, spotted scales. It's relatively inexpensive and has a slightly sweet, juicy flesh. It's great grilled, boiled, and added to mayonnaise-based salads.
Lake trout are much less common than brook trout. They have a creamy body and white, juicy flesh.
When to buy?
Trout can be purchased at any time of the year.
How to choose the best one?
Freshwater fish has a more delicate flavor than saltwater fish. It should be cooked as soon as possible after catching. Choose trout with light, clear eyes and a subtle fresh-fish aroma.
