Chocolate ganache

Ganache (from the French ganache) is a cream made from chocolate and cream, used to decorate desserts or as a filling for cakes and candies. Ganache was invented in the 19th century in a French pastry shop. According to legend, it happened by accident when a young Parisian pastry chef spilled hot milk into a vat of chocolate.

Recipe:
- 250 g chopped dark chocolate
- 250 g boiled heavy cream
Melt the chocolate completely in a double boiler. Pour the cream into a medium bowl and add the chocolate. Whisk the mixture very slowly until it forms a glossy, elastic mass. You can dip baked goods in the ganache or use it as a filling.
