Pomegranate molasses

This viscous, dark-brown liquid, similar to a thick syrup, is made from pomegranates and used in baking bread, preparing Turkish dishes such as pide and lamakun, and as a salad dressing. Pomegranate molasses imparts a tart flavor to dishes.
To prepare pomegranate molasses, you need to boil down the pomegranate juice several times.
Recipe for 1 cup of pomegranate molasses: Combine 4 cups fresh pomegranate juice, 1/2 cup sugar, and the juice of 1/2 lemon. Bring to a boil, then reduce heat and simmer, stirring occasionally, until thickened and reduced by a quarter, about 1 hour.
