Pomegranate adds a sweet-tart note and ruby ​​hue to this impressive dish, perfect for both holidays and a quick midweek dinner. Pomegranate molasses forms the basis for a fruity glaze on the salmon fillet, which caramelizes perfectly on the surface. While the fish is in the air fryer, prepare a vibrant sauce with pomegranate seeds, cilantro, and hot serrano pepper. The whole dish will take you about 20 minutes to prepare.

Ingredients:

  • 2 tbsp. l. pomegranate molasses
  • 1.5 tsp sweet chili sauce
  • 1.5 tsp. lightly salted soy sauce
  • 1 clove of garlic, grated
  • 2 teaspoons of honey
  • Juice of 1 lime
  • 4 skinless salmon fillets, weighing 220 g each (center part)
  • 0.5 tbsp. pomegranate seeds
  • 1/4 cup fresh cilantro leaves, finely chopped
  • 1 tbsp. l. olive oil
  • 1 serrano pepper, seeded and finely chopped (optional)
  • Special equipment: air grill with a capacity of 6 liters.
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a medium bowl, whisk together the pomegranate molasses, sweet chili sauce, soy sauce, garlic, 1 teaspoon honey, half the lime juice, 1/4 teaspoon salt, and a few grinds of black pepper until smooth. Brush the salmon fillets with the glaze and sprinkle each with 1/4 teaspoon salt.
  • Step 2
  • Place the fish pieces in the air fryer basket, making sure they don't touch each other. Cook at 200°C (400°F) until the surface of the fish is caramelized and the flesh flakes easily with a fork, 6 minutes for medium rare and 7 minutes for medium.
  • Step 3
  • Meanwhile, combine the pomegranate seeds, cilantro, olive oil, serrano, remaining 1 teaspoon honey, lime juice, 1/4 teaspoon salt and a few grinds of black pepper until smooth.
  • Step 4
  • Transfer the fish to a serving platter and drizzle with the pomegranate sauce.
