Salmon and glaze
- 1 cup sherry vinegar
- 2 tbsp mustard
- 1/4 cup honey
- 1 tbsp. ancho chili pepper seasoning
- 4 salmon fillets, 170g each
Spicy tomato sauce
- 2 medium-ripe tomatoes, diced
- 2 tbsp. onions, finely chopped
- 2 tbsp parsley, finely chopped
- 1 tsp chili flakes
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:
- Step 1
- In a small saucepan over high heat, reduce the vinegar to 1/4 cup. Combine the vinegar syrup, mustard, honey, and chili powder in a bowl. Season with salt and pepper to taste. Let sit for 30 minutes. Step 2
- Heat the grill. Coat the salmon with the glaze and cook over medium heat, turning, for 3 minutes. Serve the salmon with the spicy tomato sauce. Step 3
- To prepare the sauce Mix all the necessary ingredients in a bowl, adding salt and pepper to taste. Serve warm.
