Before grilling, the salmon fillets are marinated for a few minutes in a French vinaigrette made with red wine vinegar, olive oil, mustard, honey, and garlic, with the addition of olives, which impart a vibrant flavor to the dressing and the fish. While grilling, the salmon pieces are also brushed with the dressing, resulting in a delicious and juicy salmon full of Mediterranean flavor. Be careful not to overcook the fish, otherwise it will turn out dry. You can grill it on any grill or in a grill pan.

Ingredients for the recipe:
- 0.5 cups olive oil
- 1/4 cup red wine vinegar
- 0.5 cups pitted Nicoise olives
- 1/4 teaspoon chili de arbol powder or cayenne pepper
- 2 cloves garlic, chopped
- 1 tbsp Dijon mustard
- 1 tbsp. honey
- 4 salmon fillets weighing 180 g each.

Cooking the dish according to the recipe:
- Combine olive oil, vinegar, olives, chili powder, garlic, mustard, and honey in a blender and blend until smooth. Season with salt and pepper to taste.
- Place the fish in a small baking dish; pour 1/2 cup of the vinaigrette over it and let it marinate for 15 minutes. Preheat the grill to high heat or place a grill pan over high heat.
- Remove the salmon from the marinade, season with salt and pepper. Cook for 3-4 minutes on each side, brushing on the remaining seasoning every 2 minutes.
