This refreshing arugula and strawberry salad is a wonderful addition to a summer menu. The zesty flavor of the arugula is pleasantly balanced by the sweetness of the berries, the tart-sweet dressing, and the rich, salty shavings of Parmesan cheese. Instead of traditional vinegar, the vinaigrette for this salad is made with freshly squeezed lime and orange juice. The aroma is extraordinary, and the flavor is invigorating. Dress the salad gradually, using only part of the dressing to avoid overpowering the flavors of the other ingredients. Place the remaining dressing on the table for everyone to add to their tastes.
