The easiest way to make arugula as a beer appetizer is with arugula. The slightly bitter flavor of this green is especially appealing with a tart mustard dressing made with white wine vinegar and olive oil. Add chopped walnuts for crunch. Serve with any meat, poultry, or fish dish. A superb salad for both TV time and everyday use.

In a large bowl, combine 2 teaspoons each grainy mustard and white wine vinegar, 1/4 teaspoon salt, and black pepper to taste. Gradually whisk in 3 tablespoons olive oil. Add 3 bunches of torn arugula and 1/3 cup chopped toasted walnuts and toss to combine. Serve with chicken. lollipops.
