Ingredients:

  • 4 pieces of salmon fillet, 170 g each
  • One tube (500 gr.) ready polenta, cut into 12 circles
  • 3 cups cherry tomatoes
  • 2 tbsp olive oil, plus more for grilling
  • 3 cloves garlic, finely grated
  • 1/2 teaspoon chopped thyme, plus 3 sprigs
  • 1/4 cup dry white wine
  • 1 tbsp chopped chives
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat the grill to medium. On a large piece of foil, toss the tomatoes with 1 tablespoon of olive oil, garlic, 3/4 teaspoon of salt, and a few grinds of pepper. Add the thyme sprigs and lift the edges of the foil slightly. Pour in the wine and fold the edges together to form a packet; set aside.
  • Step 2
  • Brush both sides of the polenta circles with the remaining 1 tablespoon of olive oil. Season with salt and pepper. Sprinkle the salmon with chopped thyme and season with salt and pepper.

    Oil the grill grates. Place a foil packet on the grill and cook until the tomatoes are tender, 10 to 12 minutes. Grill the polenta and salmon skin-side down for 3 to 4 minutes; flip and cook for another 3 to 4 minutes, or until the salmon is cooked through.

  • Arrange the salmon pieces and polenta on plates. Add the tomatoes and drizzle with their juices. Sprinkle with chives.
