When can I buy it?

Farmed fish is available year-round, while wild salmon is only available from March to September.

How to choose the best?

When buying salmon, look at its flesh. Organic fish, meaning fish raised on natural, wild-caught feed, should have pale pink flesh. Farmed salmon may have bright pink flesh. Darker flesh may indicate the use of chemicals in the feed. Never buy fish with grayish flesh or an overly fatty appearance.

Preparation

You can fry the fish whole. But it's best to gut it first, cut off the fins, and remove the bones with tweezers before cooking.

Salmon can be eaten raw, made into sushi or sashimi, marinated with sugar and dill, boiled, grilled, baked, or braised. Salmon with a poached egg is delicious. It can be served hot or cold. This exquisite dish will add a festive touch to any table.
