If you're looking for a quick and easy recipe for delicious salmon, try poaching. The fish pieces are simmered in a small amount of water with wine and lemon juice, and in just minutes they become incredibly juicy and tender. Poached salmon can be served as a main course with a side dish or used in salads and other appetizers.

Ingredients:

  • 1 teaspoon olive oil
  • 4 salmon fillets, 110–170 g each.
  • 2 lemons, 1 halved and 1 cut into wedges
  • 1 bottle of dry white wine, such as Pinot Grigio
  • Fresh parsley for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Drizzle the salmon fillets with olive oil and sprinkle with a little sea salt and white pepper. Set aside.
  • Step 2
  • Fill a large, deep-sided skillet one-third full with water. Add the wine and lemon halves. Bring to a gentle simmer, add the fish, and cook until firm to the touch, 5–7 minutes for medium-well done. Poach for 10 minutes until fully cooked.
  • Step 3
  • Serve the fish garnished with lemon wedges and herbs.
