Baked salmon with grapefruit sauce


How to Make Baked Salmon with Grapefruit Sauce

This exquisite dish is surprisingly simple and quick to prepare. Salmon fillet is baked in the oven and served with a spicy sauce made with grapefruit juice, shallots, and honey, along with spices. The entire preparation process takes no more than half an hour.

Ingredients:

  • 4 salmon fillet without skin 140-170 gr.
  • 1/4 teaspoon salt
  • 2 Ruby Red grapefruits
  • 2 tsp olive oil
  • 1 tbsp chopped shallot
  • 1 teaspoon ground ginger
  • 2.5 teaspoons of honey
  • A pinch of cayenne pepper
  • 2 teaspoons lemon juice
  • 2 tbsp finely chopped basil leaves
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 170°C.
  • Step 2
  • Sprinkle salmon with 1/4 teaspoon salt, place on a baking dish and bake until cooked through, about 18 minutes.
  • Step 3
  • Prepare the sauceWhile the salmon is baking, cut one of the grapefruits into wedges, trimming off the top and bottom. Then, standing it on one of the cut sides, peel off the rind, also removing the white pith underneath. Then, using a paring knife, remove each grapefruit wedge from its rind and cut the wedges in half. Set the wedges aside. Juice the second grapefruit and set it aside.
  • Step 4
  • Heat oil in a small skillet over medium heat. Add the shallots and sauté until soft, about 2 minutes. Add the ginger, grapefruit juice, honey, and cayenne pepper and bring to a simmer. Cook for about 10 minutes, until the sauce has reduced by about half. Add lemon juice and season with salt to taste.
  • Step 5
  • Just before serving, stir the grapefruit slices and basil into the sauce. Place the salmon on a serving platter. Pour the sauce over the salmon and serve.
