This simple dish, made with lean salmon fillet baked to perfection and simple seasonings, is incredibly heart-healthy. And it only takes 20 minutes to prepare.

Ingredients:


Salmon
  • 340 g salmon fillet, cut into 4 pieces
  • Medium-ground salt
  • Freshly ground black pepper
  • Walnut and Herb Sauce, recipe below
  • Baked pumpkin, for serving (optional)

Walnut sauce with parsley
  • 1 shallot
  • 1 tbsp red wine vinegar
  • 2 tbsp capers (rinsed)
  • 1 cup fresh parsley
  • 1/2 cup toasted almonds
  • Extra-virgin olive oil
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 230°C.
  • Step 2
  • Season the fish with salt and pepper. Place the salmon pieces skin-side down on a baking sheet.
  • Step 3
  • Bake until cooked through, about 12-15 minutes. Serve the fish with parsley-flavored nut sauce, if desired.

  • Step 4
  • Finely chop the shallots and place them in a small bowl. Drizzle with wine vinegar and add a pinch of salt. Let sit for 30 minutes.
  • Step 5
  • Coarsely chop the capers, parsley, and almonds and add to the shallots. Drizzle with olive oil and season with salt and pepper to taste.
