Salmon
- 340 g salmon fillet, cut into 4 pieces
- Medium-ground salt
- Freshly ground black pepper
- Walnut and Herb Sauce, recipe below
- Baked pumpkin, for serving (optional)
Walnut sauce with parsley
- 1 shallot
- 1 tbsp red wine vinegar
- 2 tbsp capers (rinsed)
- 1 cup fresh parsley
- 1/2 cup toasted almonds
- Extra-virgin olive oil
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

- Step 1
- Preheat oven to 230°C. Step 2
- Season the fish with salt and pepper. Place the salmon pieces skin-side down on a baking sheet. Step 3
- Bake until cooked through, about 12-15 minutes. Serve the fish with parsley-flavored nut sauce, if desired.

Step 4 - Finely chop the shallots and place them in a small bowl. Drizzle with wine vinegar and add a pinch of salt. Let sit for 30 minutes. Step 5
- Coarsely chop the capers, parsley, and almonds and add to the shallots. Drizzle with olive oil and season with salt and pepper to taste.
