  • 4 sweet potatoes, peeled and cut into 2.5 cm cubes
  • 1/4 cup olive oil, plus a little extra for drizzling over potatoes after cooking
  • 1/4 cup honey
  • 2 tsp ground cinnamon
  • Salt and ground black pepper

Preparation:

    Step 1
  • Preheat oven to 190°C.

    Place the sweet potatoes in a single layer in a baking dish. Drizzle with oil and honey, and sprinkle with cinnamon, salt, and pepper. Bake in the oven until tender, 25-30 minutes.

    Remove the potatoes from the oven and transfer them to a serving platter. Drizzle with olive oil again.
