Potato recipes
The unchanging centerpiece of any meal is the potato. Boiled, fried, baked, in salads and soups, potato dishes are a daily staple.
No holiday is complete without it. In fact, we can't even imagine a holiday without this vegetable on our table. The healing properties of potatoes have been known in Rus' since ancient times. They are used to treat eczema, upper respiratory tract infections, edema, gastritis, headaches, and more. Potato dishes are indispensable in a healthy diet. Being a major source of potassium, potatoes play a vital role in normalizing water balance in the body and supporting heart function.
This beloved vegetable is also used in cosmetics. A mask made from boiled potatoes, mashed with egg yolk and milk, nourishes the skin. And if you make a hand bath with the water in which the potatoes were boiled, your hands will be refreshed and beautiful.
However, our beloved potato is most widely used in cooking. There are over 1,000 different potato dishes. It's delicious in a variety of ways. It's boiled, baked in its skin (in its jacket), and used in a variety of first, second, and even sweet dishes. There are a few simple cooking rules. To preserve the nutritional value of potatoes, don't expose them to air or water for long periods, avoid boiling them in copper or tin pans, and avoid overcooking them. If you follow these simple rules, potatoes retain almost 80% of their vitamin C.
I think every housewife has her own secrets for her favorite potato dishes. But I'd like to offer a few simple yet delicious recipes that are quick and easy to prepare.
Potato pancakes
Grate several peeled potatoes on a coarse grater and season with salt. Pour vegetable oil into a hot frying pan and spread the potatoes into thin patties, pressing them down with a spatula. Fry on both sides. Serve as a side dish (it looks very pretty), or as a separate dish.
Croquettes
Boil the potatoes, mash them, and add the eggs. Form the mixture into patties, dip them in the egg and breadcrumbs, and fry in vegetable oil. You can substitute fried lard for the vegetable oil. You can stuff the patties with a piece of fried meat, sausage, or mushrooms. It's up to you.
You can cook baked ones sausages in potato dough. So, boil the potatoes, mash them, add eggs, pepper, and a little flour. The potato dough is ready. Wrap a boiled sausage or frankfurter in this dough and bake in the oven. Top the finished potato dish with ketchup.
Here are some potato recipes that require more cooking time. However, if you take the time, the results will meet all your expectations.
Potatoes in foil.
Place sliced potatoes, pieces of fried bacon, and onion slices in foil greased with vegetable oil. Season with salt and pepper, pinch the foil shut, and bake in the oven. Cooking time is 20 minutes. Serve directly in the foil, drizzled with ketchup of your choice.
Potato casserole with meat.
Place 0.5 kg of finely diced pork on a baking sheet. Season the pork with salt and pepper to taste. If the meat is lean, add lard. Place a layer of julienned potatoes mixed with onions on top of this layer of pork. Bake in the oven. When the dish is almost ready, sprinkle it with grated cheese. When the cheese has melted, remove the casserole from the oven and garnish with herbs.
