When making homemade chips, it's important to slice the potatoes very thinly, thoroughly rinse off all the starch, and dry the slices as thoroughly as possible, otherwise the oil will splatter.

Cooking the dish according to the recipe:
- Wash the potatoes thoroughly. Using a mandoline or vegetable slicer, slice the potatoes as thinly as possible, placing them in cold water. Combine the garlic salt, paprika, black pepper, cayenne pepper, and salt in a small bowl and set aside.
- Heat a little vegetable oil in two heavy-bottomed Dutch ovens to 190°C (attach a deep-fry thermometer to maintain the correct temperature!). Place the potatoes on a baking sheet lined with paper towels and pat dry with more paper towels.
- Using a spatula, lower the potatoes into the oil in batches. They will fry very quickly, about 1.5 minutes at a time; remove with a spatula when the chips are golden and crispy. Sprinkle with the spice mixture immediately.
