How to Make Homemade Potato Chips

A step-by-step recipe with photos for homemade deep-fried potato chips.


Ingredients:

  • 6 large potatoes, unpeeled
  • Vegetable oil, for frying
  • Coarse salt and black pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Wash and peel the potatoes. Using a slicer or vegetable peeler, cut the potatoes into thin slices. Keep the chips in a bowl of ice water while you slice them to prevent them from browning. This will also remove excess starch.
  • Step 2
  • Heat oil in a Dutch oven to 200°C (use a thermometer to monitor the temperature!). Once hot, place the potatoes on a paper towel-lined baking sheet and pat dry with plenty of paper towels.
  • Step 3
  • Using a slotted spoon, lower the potatoes into the oil in batches and fry until golden brown, about 5 minutes. Transfer the chips to a serving platter and immediately sprinkle with salt and plenty of black pepper. Serve the potato chips warm.
