Homemade Beef Pastrami


How to Make Beef Pastrami at Home

Recipe for making beef pastrami at home.


Ingredients:


Spices
  • 1/4 cup black peppercorns
  • 1/4 cup coriander seeds

Brine
  • 4 liters of cold water
  • 1 cup coarse salt
  • 1 tbsp liquid smoke
  • 5 cloves garlic, crushed
  • 1/2 cup brown sugar
  • 3 tbsp. spices for pickling
  • 2 bay leaves
  • 1 (2.5 kg) beef brisket, trimmed of fat and tendons
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place pepper and coriander in a coffee grinder and grind coarsely.
  • Step 2
  • In a large saucepan, combine all the brine ingredients and bring to a boil. Remove from heat and let cool. Submerge the brisket in the brine and refrigerate overnight. Remove the brisket from the brine and pat dry. Rub with spices.
  • Step 3
  • Preheat oven to 150°C.
  • Step 4
  • Place the brisket on a rack set over a baking sheet and roast until the meat flakes easily with a fork, about 4 hours. Transfer the pastrami to a cutting board and slice. Place the beef pastrami on a serving platter and serve.

    Chef's advice


    Make a homemade beef pastrami sandwich: layer beef, sautéed onions, and thousand island dressing on slices of rye bread.
