Homemade pesto sauce - a detailed recipe.


Ingredients:

  • 1/4 cup walnuts
  • 1/4 cup pine nuts
  • 3 tablespoons chopped garlic (9 cloves)
  • 5 tbsp. fresh basil leaves
  • 1 teaspoon coarse salt
  • 1 teaspoon freshly ground black pepper
  • 1.5 cups of good olive oil
  • 1 tbsp. freshly grated parmesan
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the walnuts, pine nuts, and garlic in the bowl of a food processor fitted with a steel blade. Process for 30 seconds. Add the basil leaves, salt, and pepper.
  • Step 2
  • With the processor motor running, slowly pour in the olive oil through the hole in the lid and puree.

    Add the Parmesan and continue to stir for about a minute. Serve or store the homemade pesto in the refrigerator or freezer, drizzling a thin layer of olive oil on top.

    This dish is paired with Pinot Gris wine.
