In a bowl, combine 2 cups of leftover mashed potatoes, 1/3 cup of flour, 2 tablespoons of milk, and 1 tablespoon of chopped herbs (mixed herbs). Knead until smooth. Season with salt and pepper.

On a floured surface, divide the dough into 4 balls and form them into 8-cm (3-in) patties. Melt 1.5 tablespoons (75 g) butter in a large skillet over medium-high heat. Add the potato pancakes and fry until golden brown, 4-5 minutes per side, adding more butter if needed. Season with salt.
