Ingredients:


For ice cream:
  • 6 egg yolks
  • 1/2 cup sugar
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1/2 vanilla pod, cut in half lengthwise and scrape out the seeds
  • 30 ml of Baileys Irish Cream liqueur
  • 30 ml Irish whiskey

For one cocktail:
  • A scoop of vanilla ice cream
  • A little chocolate bitters
  • 60 ml of Guinness beer
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Prepare ice cream: In a large bowl, beat the egg yolks with sugar until pale. Heat the milk, cream, and vanilla bean with seeds in a saucepan over low heat. Then slowly pour the hot liquid into the egg mixture, whisking constantly.
  • Step 2
  • Strain the mixture through a fine sieve into a clean bowl, then place the bowl in a larger bowl filled with ice water. Add the Irish cream and whiskey to the milk mixture and stir until completely chilled.
  • Step 3
  • Place the cooled milk mixture in the freezer and freeze, stirring occasionally, for 3 hours. Or freeze the mixture in an ice cream maker.
  • Step 4
  • Prepare a cocktail: Place a scoop of ice cream in a glass. Add a splash of chocolate bitters, then fill the glass to the top with Guinness.
  • Step 5
  • If you don't have an ice cream maker, combine Baileys Irish Cream with soft serve vanilla ice cream and freeze until firm.
