Tyler Florence takes the classic mimosa cocktail to the next level by replacing regular orange juice with quick, homemade orange ice cream. He blends the juice with cream and sugar and freezes it. He spoons the ice cream into flutes and tops them with champagne. The champagne can be substituted with non-alcoholic sparkling wine, sparkling cider, or ginger ale. When filling the glass, leave plenty of room—the ice cream will foam up, giving the cocktail its distinctive color. This cocktail is perfect for any special occasion.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

- Zest of 1 orange
- 1 cup of 10% cream
- 1 cup of ultrafine sugar
- 1 bottle of sparkling wine or champagne
- Strawberries for decoration

Cooking the dish according to the recipe:
- Combine the orange juice, zest, cream, and sugar in a blender and blend until the sugar dissolves, about 30 seconds. Pour the mixture into a shallow pan and freeze until firm, at least 4 hours or overnight.
- Remove the frozen orange mixture from the freezer and let it soften slightly, about 10 minutes. Scrape a small ball into a champagne flute. Slowly fill the glass with champagne and serve, garnished with strawberries.
