This sparkling cocktail is based on freshly squeezed blood orange juice. Mix it with gin and simple syrup and top it off with champagne. It's a bright and refreshing festive drink, perfect for a New Year's Eve party.

Prepare sugar syrup:
Combine 0.5 cups each of sugar and water in a small saucepan and cook, stirring, until the sugar is completely dissolved; let cool completely.

Combine 0.5 cups of blood orange juice and 90 ml each of simple syrup and gin in a liquid measuring cup. Refrigerate until ready to serve. Pour the cocktail into 8 champagne flutes and top with chilled champagne or other sparkling white wine.
