How to Make a Raspberry Mimosa Sunrise

This luxurious drink combines two popular cocktails: the Tequila Sunrise and the Mimosa. Made without tequila, only with sparkling white wine, grenadine, orange juice, and raspberries, it takes on the charming sunrise-like appearance for which the Tequila Sunrise is so beloved. Mix the cocktail in a large pitcher for a crowd, and freeze some beautiful raspberry-flavored ice for it. A perfect treat for bachelorette parties, brunches, March 8th, or Mother's Day!


Ingredients:

  • 280 g fresh raspberries
  • 0.5 cups chilled grenadine
  • 2 cups chilled orange juice without pulp
  • 1 bottle (750 ml) of dry white sparkling wine, chilled
  • Special equipment: 12-cube ice cube tray, freezer-safe pitcher, and large spoon
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Prepare ice:


    Fill each ice cube tray about a third full with water and freeze for about 1 hour. Blend half the raspberries in a food processor until smooth. Add 1-2 teaspoons of raspberry puree to each ice cube tray to fill another third. Freeze for about 1 hour to allow the puree to set. Then top up each tray with water and freeze until completely frozen, about another hour.
  • Step 2
  • Prepare a cocktail:


    Carefully pour the grenadine into a large pitcher, being careful not to splash it down the sides. Freeze until the grenadine is very cold and thick, about 30 minutes. Place a large spoon into the pitcher, holding it so the bottom touches the rim of the pitcher just above the grenadine line. Slowly pour in the orange juice, spoon by spoon, filling the spoon and allowing the juice to pour over the grenadine without mixing. Gradually lift the spoon upward as the level of the orange juice rises. Using the same technique, add the sparkling wine to the pitcher, stopping after half the bottle has been poured to allow the fizz to subside. Continue pouring, slowly lifting the spoon upward as the level of the wine rises. Top with half the remaining raspberries.
  • Step 3
  • Stir before serving. Add prepared ice cubes to champagne flutes. Pour the cocktail over and garnish with the remaining raspberries.
