Non-alcoholic mulled hibiscus wine and mimosa-kwanzaa cocktail

"This non-alcoholic mulled wine is a deliciously spiced drink made with African teas (red rooibos and hibiscus) and ripe red fruits, giving it a seasonally appropriate (and culturally significant!) deep red color with the flavors of ancient Africa (cloves, black pepper, and Ashanti pepper). I've made this mulled wine for countless family and friendly gatherings during the Kwanzaa festival. It's infused with classic holiday spices, boasting warming and healing properties. When you brew it, the aroma fills the house, making you want to pour it straight from the pot into mugs. But since the flavor only improves with each passing day, I make a very large batch and then reheat it. Once cooled, the mulled wine can be used to make a Kwanzaa Mimosa," says Tonya Hopkins.
Ingredients:
Non-alcoholic mulled wine with hibiscus
- 2 tbsp dried sour cherries or 60 ml cherry juice
- 4 whole cloves
- 4 African peppercorns
- 4 black peppercorns
- 4 allspice peas
- 2 cinnamon sticks
- 5 cm fresh ginger root, thinly sliced
- 1 nutmeg
- 0.5 cup brown sugar (or coconut sugar, honey, date sugar, maple syrup)
- 1 cup dried hibiscus flowers
- 2 teaspoons loose rooibos tea
- Zest of 1 orange
- 4 slices of seasonal citrus (lime, lemon, mandarin or orange), for serving
Mimosa-Kwanzaa cocktail
- Candied ginger
- Alcohol of your choice, such as bourbon or dark rum
- Amber maple syrup
- Freshly squeezed lime juice
- Sparkling rose wine
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

- Non-alcoholic mulled wine with hibiscus:
In a medium saucepan, bring 4 cups of water to a boil. Reduce heat to medium-low, then add the dried cherries, cloves, whole peppercorns, cinnamon sticks, ginger, and nutmeg (see Note). Simmer until the liquid is fragrant, about 1 hour.
Step 2 - Stir in the brown sugar until completely dissolved. Turn off the heat, then add the hibiscus flowers, rooibos tea, and orange zest. Cover and let steep for at least 30 minutes and up to 1 hour. Step 3
- Strain the liquid through a fine sieve into a separate container. Just before serving, reheat it and pour into mugs. Garnish with citrus slices and serve immediately. Step 4
- Mimosa-Kwanzaa cocktail:
Make zawadi cubes by placing a piece of candied ginger peel in each hole of an ice cube tray, then fill the tray with a small amount of mulled wine. Freeze.
Step 5 - Pour 30 ml of alcohol, 1 tsp of amber maple syrup and 0.5 tsp of lime juice into each cocktail glass and stir. Step 6
- Place a frozen zawadi cube in a glass, top up with sparkling wine, and wait for your Kwanzaa gift to arrive! You can increase or decrease the amount of each mulled wine ingredient according to your personal preference. Avoid boiling or over-simmering the drink to preserve the vibrant color.
