The beauty of mulled wine is that you can take an inexpensive dry wine and transform it into a priceless, warming, healthy (when consumed in moderation), aromatic, and beloved beverage. This mulled wine is brewed with white wine and, unlike its red counterpart, has a lighter flavor. Add honey, spices, citrus zest, and a splash of Calvados, and serve hot, with lemon and orange slices in each mug.

In a large cauldron, combine 2 bottles of dry white wine, 0.5 cups of honey, and 1/4 cup of Calvados or brandy. Add 6 allspice berries, 6 black peppercorns, 6 star anise, 4 slices of fresh ginger, 2 cinnamon sticks, and 2 wide strips of lemon and orange zest. Bring to a gentle simmer and cook for 10-15 minutes (at a very low simmer). Before serving, add a few lemon and orange wedges.
