Fall and winter are the perfect time for a fragrant and spicy mulled wine. To create the perfect drink, spices are simmered in non-alcoholic apple cider (unfiltered, sugar-free apple juice) to allow their flavors and aromas to develop and intensify before adding red wine, port, and fruit. The result is a wonderfully warming mulled wine that your friends will appreciate. Avoid serving the simmered fruit; instead, add fresh fruit.

Ingredients:

  • 3 cups apple cider (non-alcoholic)
  • 5 carnation buds
  • 4 cinnamon sticks
  • 1 teaspoon allspice peas
  • 1 teaspoon black peppercorns
  • 2 bottles of 0.75 l dry red wine
  • 2 cups ruby ​​port
  • 2 clementines, thinly sliced ​​(seeds removed)
  • 2 apples, thinly sliced ​​(remove seeds)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a medium saucepan, combine the cider, cloves, cinnamon, allspice, and peppercorns. Bring to a boil, then reduce heat and simmer until the liquid has reduced by a third, about 10 minutes.
  • Step 2
  • Strain the cider through a sieve into a clean saucepan, then discard the spices. Add the red wine, port, half the clementines, and half the apples. Cover and simmer over medium heat for 5-7 minutes.
  • Step 3
  • Reduce the heat to low to keep the mulled wine warm. Garnish the glass of warm mulled wine with the remaining fresh apple and clementine slices (leave the cooked fruit in the pan).
