This simple and quick Italian sauce is made with fresh tomatoes and herbs in just ten minutes and pairs perfectly with a variety of dishes. Chopped tomatoes are simmered with garlic, onion, and fresh herbs until the sauce is infused with the flavors of Mediterranean spices. For best results, use several herbs, such as a mixture of parsley, basil, and oregano. To balance the acidity of the tomatoes, add a pinch of sugar at the very end. This sauce pairs perfectly with cheese ravioli, pasta, or gnocchi.


Ingredients:

  • 2 cloves garlic, crushed
  • 2 tbsp diced onion
  • 2 tbsp. l. olive oil
  • 2 tomatoes, chopped
  • 3 tbsp fresh herbs (oregano, basil, parsley), chopped
  • A pinch of sugar
  • Ravioli with cheese and herbs, ready to serve
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a saucepan over medium heat, sauté the garlic and onion in olive oil for 2 minutes. Add the tomatoes and herbs and continue cooking for 5 minutes, until the tomatoes are soft. Season with salt, pepper, and sugar. Serve with ravioli.
