This lighter version of the classic American meatloaf is made with ground turkey instead of a mixture of several meats. Fried onions and coarse panko breadcrumbs soaked in chicken broth make the meatloaf incredibly moist and tender. Fresh thyme, sage, and garlic infuse it with a rich, spicy flavor. No special baking pan is needed: simply shape the meat mixture into a loaf by hand, brush with ketchup, and bake. You'll have the most delicious turkey meatloaf ever! Serve it with a side dish, as a main course, or use it in sandwiches.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1.3 kg ground turkey
  • 1/4 cup olive oil
  • 1 large onion, chopped
  • 2 teaspoons fresh thyme leaves
  • 1 teaspoon chopped fresh sage
  • 2 cloves garlic, grated
  • 1 tbsp tomato paste
  • 3 tablespoons Worcestershire sauce
  • 3/4 cup panko breadcrumbs
  • 0.5 cup chicken broth
  • 2 large eggs
  • 0.5 cups ketchup

Cooking the dish according to the recipe:


  1. Preheat oven to 220°C, line a baking sheet with foil.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion, thyme, sage, 1 teaspoon salt, and 1/2 teaspoon black pepper. Cook, stirring frequently, until the onion is softened, about 10 minutes. Add the garlic and cook for 1 minute. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire sauce. Remove from heat and let cool.

  3. Pour in panko breadcrumbs Place the turkey breasts in a large bowl and pour in enough chicken broth to absorb the liquid. Add the ground turkey, eggs, 2 teaspoons of salt, 1/2 teaspoon of black pepper, and the cooled onion mixture. Mix well with your hands to distribute the ingredients evenly. On a foil-lined baking sheet, form the meat mixture into a 25x12 cm loaf. Brush the top and sides with ketchup.
  4. Place the meatloaf in the oven and reduce the oven temperature to 350°F (175°C). Bake until a thermometer inserted into the center of the loaf registers 165°F (74°C), 45 minutes to 1 hour. Let cool slightly, slice, and serve.
