Meatloaf "al pastor"

This meatloaf recipe was inspired by the Mexican dish al pastor, a spicy roast pork with pineapple and salsa. Add sautéed pineapple directly to the ground pork along with the spices, form into a loaf, and bake. The meatloaf is flavorful and juicy. Serve with green salsa (salsa verde) and red salsa (salsa roja).

Ingredients:


Meatloaf
  • 2 slices of white bread
  • 3 canned pineapple rings, finely chopped, + juice from the can
  • 1 tbsp. l. olive oil
  • 0.5 cup finely chopped white onion
  • 0.5 tsp liquid smoke
  • 900 g of minced pork
  • 0.5 cups canned green chili peppers
  • 2 teaspoons adobo seasoning with black pepper
  • 1 large egg, beaten

Topping
  • 0.5 tbsp. salsa vede
  • 0.5 cup finely chopped white onion
  • 0.5 cup chopped fresh cilantro
  • 1/4 tbsp. salsa roja
  • Lime wedges, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 190°C. Place the bread in a bowl and add the pineapple juice. Let sit for about 10 minutes.
  • Step 2
  • Meatloaf:

    Heat olive oil in a large skillet over medium-high heat. Add the onion, chopped pineapple, a pinch of salt, and a few turns of the black peppercorns. Cook for a few minutes, without stirring, until golden brown. Add liquid smoke and stir. Set aside to cool.
  • Step 3
  • In a large bowl, combine the ground pork, green chili pepper, adobo spice, egg, soaked bread, a few grinds of black pepper, and the pineapple-onion mixture. Mix with your hands, distributing the ingredients evenly without compacting the ground pork.
  • Step 4
  • On a parchment-lined baking sheet, form the meatloaf mixture into a loaf approximately 10 x 20 cm in size. Bake, uncovered, until the meatloaf is golden brown, about 50 minutes.
  • Step 5
  • Topping:

    Spread the meatloaf with salsa verde and cover carefully with foil for 10 minutes. When ready to serve, sprinkle with onion, cilantro, and drizzle with salsa roja, then slice and serve with a wedge of lime.
