This juicy meatloaf with cheddar and bits of fried bacon is coated in a mixture of ketchup, Worcestershire sauce, and brown sugar during baking, which turns into a delicious glaze in the oven. Its sweet and tart flavor perfectly complements the rich flavor of the meat. To make the meatloaf especially juicy and delicious, it's made from a mixture of several types of ground meat in equal proportions, such as beef, pork, and veal (turkey can be substituted for veal).

Ingredients:

  • 700 g of minced meat for meatloaf
  • 1 tbsp. breadcrumbs
  • 1 cup grated sharp cheddar
  • 3/4 cup chopped fried bacon
  • 2 tablespoons chopped fresh chives
  • 2 tbsp chopped fresh parsley
  • 2 large eggs, lightly beaten
  • 1 medium onion, grated
  • 1 clove garlic, minced
  • 0.5 cups ketchup
  • 1 tbsp + 1 tsp Worcestershire sauce
  • 2 tsp light brown sugar
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 175°C. Line a 22x10 cm loaf pan with parchment paper.
  • Step 2
  • In a large bowl, combine ground meat (veal, beef, and pork), breadcrumbs, cheddar, bacon, chives, parsley, eggs, onion, garlic, 1/4 cup ketchup, 1 tablespoon Worcestershire sauce, 1.5 teaspoons salt, and 1/2 teaspoon black pepper. Mix with your hands until evenly distributed. Transfer the meat mixture to the prepared loaf pan. Bake the meatloaf for 30 minutes.

  • Meanwhile, in a small bowl, combine brown sugar with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire sauce.

  • Remove the meatloaf from the oven and brush with the ketchup glaze. Bake until the glaze begins to caramelize and a thermometer inserted into the center of the meatloaf registers 160°F (71°C), about 45 minutes more. Let rest for 10 minutes before slicing and serving.
