Crispy bacon perfectly complements melting cheddar and Monterey Jack in this hot sandwich, which is equally good for breakfast or a snack throughout the day. When grilling, keep an eye on the heat to prevent the bread from burning before the cheese melts.

Cooking the dish according to the recipe:
- Place 2 slices of bread on a cutting board or work surface. Top with 1 slice of Cheddar, 2 slices of bacon, a slice of Monterey Jack cheese, the remaining slice of Cheddar, and another slice of bread; press down lightly.
- In a large skillet, heat 1 tablespoon butter over medium heat. Add the sandwiches and cook until the bread is golden brown and the cheese is slightly melted, 3-5 minutes. Flip with a spatula and add the remaining 1 tablespoon butter to the skillet. Cook until the sandwiches are golden brown on the other side, about 3 minutes more, adjusting the heat as needed to prevent the bread from burning before the cheese has melted.
