Hot sandwiches with egg and bacon

This clever recipe will help you prepare delicious scrambled eggs for breakfast or dinner for a large crowd, without having to spend half a day at the stove. The eggs are baked on a large baking sheet, then sliced and served with bread, like sandwiches. They turn out very filling and juicy, filled with green onions, tomatoes, cheese, and crispy bacon bits, which are essential not only for the fantastic taste but also because the fat rendered during baking prevents the eggs from sticking to the pan. Drizzle with hot sauce and enjoy.
Ingredients:
- 8 slices bacon (about 220g), cut into 1cm pieces.
- 1 tbsp. vegetable oil
- 18 large eggs
- 0.5 cups low-fat cream (10%)
- 3 green onions, thinly sliced
- 2 plum tomatoes, seeded and diced
- 2 cups grated sharp cheddar
- 16 potato buns, cut horizontally in half
- Hot sauce, for serving

Preparation:
- Step 1
- Preheat oven to 350°F (175°C). Place the bacon slices in a single layer on a 18 x 13-inch (45 x 32 cm) baking sheet and drizzle with vegetable oil. Bake until crispy, about 15 minutes, stirring halfway through. Remove the baking sheet from the oven, but do not drain the bacon or remove the bacon. Reduce oven temperature to 300°F (150°C). Step 2
- Meanwhile, in a large bowl, whisk together the eggs, cream, green onions, 2 teaspoons salt, and 1/4 teaspoon black pepper. Spread the bacon evenly on the baking sheet, then pour the egg mixture over the bacon and top with the tomatoes and grated cheese. Return the baking sheet to the oven, being careful not to spill the eggs, and bake until the eggs are set, about 25 minutes. Step 3
- Let the eggs cool for 5 minutes before slicing. Meanwhile, warm the buns in the oven on a separate baking sheet. Using a chef's knife or pizza cutter, cut the eggs into 16 even pieces and place each piece between the two halves of each bun. Serve the sandwiches with hot sauce.
