Butter isn't just for toasting bread. In this recipe, it plays a dual role. Choose cultured butter for your hot sandwiches, and you'll appreciate the depth and complexity of their flavor. Before assembling the sandwiches, thoroughly dry the sliced tomatoes to remove excess water, allowing you to savor the perfect, gooey cheese.

Cooking the dish according to the recipe:
- Slice the tomatoes into thin slices and place them on a paper towel. Sprinkle with salt and let them sit to release excess water, about 15 minutes. Pat dry with paper towels.
- Place 4 slices of bread on a work surface. Top each with 2 slices of cheese, covering the bread to the edges. Then add 2 slices of tomato and 1 more slice of cheese. Top the sandwiches with the remaining bread. Evenly spread both sides of the sandwiches with a thin layer of butter (about 1.5 tablespoons butter for each sandwich).
- Place 2 sandwiches in a medium nonstick skillet and heat over medium heat. Cover the skillet with a lid and cook until the bread is evenly golden, about 2 minutes. Flip, cover again, and cook until the other side is deep golden brown and the cheese is melted, about 2 more minutes. Repeat with the remaining sandwiches.
