Waffle-Made Sandwiches with Processed Cheese and Tomatoes

Complexity: easily
Quantity: 4 sandwiches
These hot cheese and tomato sandwiches are quick to prepare, perfect for a hearty breakfast, and their amazing aroma will quickly bring everyone together at the table. If you fry them in a waffle iron instead of a frying pan, you'll get delicious waffles without the need for batter, and you won't have to watch the sandwiches in the pan to flip them over quickly to prevent them from burning. The sandwiches will cook evenly on all sides in a waffle iron, resulting in a crispy, golden crust and gooey cheese.
For a more pronounced flavor, top your sandwich with several different types of cheese, and instead of raw tomatoes, use oven-baked ones. When the tomatoes evaporate their excess water during baking, all that's left is a rich, vibrant flavor.

Preparation:
- Step 1
- Preheat oven to 300°F (150°C). Arrange halved tomatoes cut-side down on a baking sheet. Drizzle with olive oil and sprinkle with salt. Bake in the oven until the tomatoes are soft and wrinkled, about 1 hour. Set aside and cool (the tomatoes can be baked and cooled up to 1 day in advance). Step 2
- Preheat a waffle iron to medium-high heat. Brush one side of each slice of bread with melted butter. Place the bread, dry side up, on a clean work surface. Spread mayonnaise on each slice. Place 2 tomato halves on 4 slices of bread, pressing them lightly into the bread. Top with 3 slices of cheese and the remaining bread. Step 3
- Place two sandwiches in the waffle iron and carefully close the lid (do not press down). Cook until the cheese is melted and the sandwiches are golden brown, 6 to 10 minutes. Step 4
- Toast the remaining sandwiches in the same way. Cut them in half and serve.
