At first glance, these look like traditional ham and cheese sandwiches, but instead of bread, they use crisp jicama, a Mexican vegetable similar to a turnip. This sandwich is low in carbs and rich in healthy fiber. You won't even remember the bread: every bite offers a winning combination of salty ham, tangy horseradish, and peppery arugula. A great idea for a healthy snack throughout the day, or for light appetizers at a house party.
The recipes use measuring containers with the following volumes:

Ingredients for the recipe:
- 1 tbsp sour cream
- 1 tbsp. thinly sliced chives
- 1 teaspoon Dijon mustard
- 1 teaspoon horseradish
- 1 medium jicama, about 10 cm wide, peeled and cut into 8 1 cm thick rounds.
- 170 g thin slices of lightly salted ham
- 4 slices Havarti cheese (about 90g)
- 2 cups fine arugula
- Pickle sticks for serving (optional)

Cooking the dish according to the recipe:
- In a small bowl, combine sour cream, green onions, mustard, horseradish and a little freshly ground black pepper.
- Place four jicama slices on a work surface. Brush each with mustard sauce, top with a quarter of the ham, a slice of cheese, and about 1/2 cup of arugula.
- Top with the remaining jicama slices, cut the sandwiches in half and serve with pickles.
