Caramelized red onions add natural sweetness to these sandwiches, while zesty pepper jack cheese adds a touch of savory. Layer fried onions, cheese, and a little tomato between two slices of bread and toast the sandwiches until the cheese melts deliciously.

- 1 large red onion, finely diced
- 80 g thin slices of cheddar (20 g each)
- 8 slices of whole grain bread
- 80 g thin slices of Pepper Jack cheese (20 g each)
- 1 large or 2 medium tomatoes, sliced into rounds

Cooking the dish according to the recipe:
- Heat oil in a nonstick skillet over medium-high heat. Reduce heat to medium. Add the onion and cook, stirring, until the edges are golden brown, about 10-12 minutes. Season with salt and pepper to taste.
- Place 20g of cheddar cheese on 1 slice of bread. Spread 1 tbsp of caramelized onions on top of the cheese and top with 20g of pepper jack cheese. Top with 1 large or 2 medium tomato slices and the second slice of bread. Repeat with the other three sandwiches.
- Spray a nonstick skillet with cooking spray and heat. Place the sandwich on the skillet and press it down with a heavy skillet or plate.
- Reduce heat to medium-low and cook until the bottom is dark brown and the cheese is partially melted, about 5-6 minutes. Flip the sandwich over and cook the other side for another 4-5 minutes. Cut in half and serve hot.
