Club sandwiches with goat cheese and herbs - a detailed recipe.


Ingredients:


For club sandwiches:
  • 1 kg of 8-grain bread, cut into thin slices
  • 1 large greenhouse cucumber, unpeeled

For spread:
  • 240 gr. cream cheese (mascarpone or Philadelphia), room temperature
  • 300 g of Montrachet goat cheese or any soft goat cheese, at room temperature
  • 1.5 tsp (2 cloves) minced garlic
  • 1/2 tsp chopped fresh thyme leaves
  • 3 tbsp chopped fresh parsley
  • 5-6 tbsp cream or milk
  • 3/4 tsp salt
  • 1/2 tsp freshly ground black pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Prepare the spread: Using a mixer on medium speed, combine the cream cheese, goat cheese, garlic, thyme, parsley, 5 tablespoons of milk, salt, and pepper until smooth. If the spread is too thick, thin it with a little milk.
  • Step 2
  • Prepare a club sandwiches: Spread the spread on all the bread slices. Thinly slice the cucumber and place it on half of the spread bread slices. Top with the remaining bread slices.

    Carefully cut the crusts off the sandwiches and cut them in half, then cut them diagonally into triangles.
  • Step 3
  • Cover the finished club sandwiches with slightly damp paper towels, wrap them in plastic wrap, and refrigerate until chilled. Before serving, cut the sandwiches diagonally.
