This healthy sandwich is perfect for lunch at work. Slices of Black Forest ham, avocado, and fresh salad greens in an olive oil dressing sit between two slices of whole-grain bread spread with goat cheese and pumpkin seed paste. A few drops of chipotle hot sauce add a smoky, spicy flavor. Serve with chilled potato salad for a more filling lunch.

We recommend

Cooking the dish according to the recipe:

  1. In a bowl, mash the goat cheese, pumpkin seeds, and 2-3 teaspoons of hot sauce with a fork until you have a smooth paste. Divide the paste evenly among four slices of bread, top with slices of ham and avocado.
  2. Toss the arugula with olive oil, a few drops of hot sauce, and salt and pepper to taste. Add the arugula to the sandwiches and top with the remaining bread. Serve with potato salad.
