To make this elegant appetizer, spread a little sweet potato hummus on each cracker and top with crumbled goat cheese and pumpkin seeds. The combination of sweet hummus and tart, creamy goat cheese is simply sublime!


Ingredients:

  • 24 Crunchmaster Pumpkin Harvest Pumpkin Crackers
  • 0.5 cups chopped cooked sweet potato
  • 3/4 cup canned chickpeas, rinsed
  • 1 clove of garlic
  • 3 tablespoons tahini
  • 5 teaspoons lemon juice
  • 0.5 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground cumin
  • 4 tablespoons crumbled goat cheese
  • 2 tbsp. peeled and toasted pumpkin seeds
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a food processor, combine sweet potatoes, chickpeas, tahini, lemon juice, garlic, salt, pepper, cumin, and 1/3 cup water and process until smooth, scraping down the sides of the bowl as needed.
  • Step 2
  • Spread 2 teaspoons of hummus on each cracker. Sprinkle with goat cheese and pumpkin seeds. Store leftover hummus in a tightly sealed container in the refrigerator for up to 3 days..
