"You can make these sweet-tart crostini with almost any cheese and a matching jam, preserve, or chutney," says Sunny Anderson. Try the sophisticated combination of fresh goat cheese and spiced cranberries and rosemary. If you can't find pre-made crostini, simply slice a French baguette on the bias, drizzle with butter, and toast or bake in the oven until golden brown.

Ingredients:

  • 1 cup dried cranberries
  • 1 cup chicken broth
  • 4 teaspoons of honey
  • 20-24 fresh rosemary leaves
  • 20 store-bought crostini
  • 200 g of goat cheese at room temperature
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a medium saucepan, combine the cranberries, broth, honey, rosemary, a pinch of salt, and a few grinds of black pepper. Bring to a boil over medium-high heat. Cook for 1 minute, then remove from heat and let cool in the saucepan.

  • Spread the crostini with goat cheese and top with cranberries.
